DESAFÍO CUPCAKE ABRIL: Primavera

This is my first contribution to desafío cupcake!! I found it quite fun for spring is my season, I was born in may. I love the way everything around you starts colouring itself to give you hints of spring, almond and cherry trees are the first to bloom (even when there's a little snow to come, at least in Madrid) giving everything a kind of girlish taste (pinks and whites).



After these trees start to bloom, you can see supermarkets with the fruit section hidden behind thounsands and thousands of strawberrys with the of whipped cream. They are screaming at you: "It's Spring time!!!". Thats why, I decided my challenge would be made off these ingredients: Strawberries and cream.

 Firts step then is to find the best cupcake recipe:

Ingredients for the cupcakes:


2 1/2 cups All purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cups milk
- 1/2 cups vegetable oil
- 3 eggs
- vanilla extract
- 5 tablespoons butter
- 1 cup sugar
- thinly sliced trawberries

Preheat oven at 180ºC. 

First sift flour, baking soda, baking powder and salt in one bowl. Mix butter and sugar together until smooth add one by one the eggs and mix after each addition. Mix on another recipient milk, oil and vanilla extract and add alternating with the butter, egg and sugar mixture. To finish add the strawberries and.. Voilá! bake for about 15-20 minutes, if you introduce a toothpick it will come out clean.



Ingredients for the white icing:

- 500gr icing sugar
- 160gr butter  softened
- 50 ml cream 

I mix icing sugar and butter first and then start adding little by little the cream, until I think it has a consistent appearance.



Ingredients for the fondant paste:

- 1 egg white
- 2 tablespoons liquid glucose, warmed
- 500 gr icing  sugar
- Food colouring

First mix the liquid glucose with the egg beating lightly. Start adding the icing sugar until it beggins to form a paste. knead into a ball and place on a clean surface, then knead until smooth.

I used strawberry pink food colouring to create the flowers. It was great fun!



You can see how the cupcakes turned out! They tasted great I must say for the first icing I make!
